White Risotto with Asparagus
This is a super easy to make and delicious and classy Istrian recipe
Ingredients (4-6 people)
1 bunch of wild asparagus (about 250 g)
2 scallions
1 small onion
2 cloves of garlic
300 g white rice
1 l vegetable stock
San Gurmano Intense extra virgin olive oil
Salt
Good pinch of white pepper
Preparation (30 min)
- Clean asparagus by removing the bottom stem part and keeping the tips
- Clean and slice scallions.
- Finely chop onion and garlic.
- Heat olive oil and add onions. Stir until onions are clear, then add scallions and garlic.
- Continue to simmer until tender.
- Add the asparagus and cook several minutes, then add rice.
- Stir gently until rice becomes transparent.
- Slowly add vegetable stock and salt to taste, reduce the heat and simmer. Continue to add stock and cook until rice becomes soft.
- Towards the end, stir gently, add a good pinch of freshly ground white pepper.
- Serve warm, with a pinch of parmesan cheese and drizzled with San Gurmano Intense extra virgin olive oil.

Monkfish and prawns CARPACCIO

Ingredients: fresh monkfish fillet, fresh prawns, arugula, lemon, salt, pepper, San Gurmano Mild extra virgin olive oil.
Preparation: Cut fresh monkfish fillet into paper-thin slices. Lay cleaned prawns and monkfish on bed of arugula. Sprinkle with fresh lemon juice, salt and pepper and drizzle generously with San Gurmano Mild extra virgin olive oil. Add one strawberry on top as decoration Serve very chilled.

Super quick and delicious pasta dish
Strain and add a generous splash of San Gurmano Intense extra virgin olive oil. Toss well.
Add freshly grated parmesan and sliced cherry tomatoes. Toss again and serve.
